New product development: a supplement combining coconut water with whey protein or egg white albumen

Abstract
The purpose of the research was to obtain a new supplement containing whey protein isolate or egg white isolate gels with the addition of coconut water. Coconut water was used as a source of minerals which enabled gelation process and enhanced nutritional value of the gels. Ion-induced gels were prepared by the addition of 10 percent (w/w) coconut water to preheated protein dispersions. Different protein formed gels with different microstructure, rheological properties and syneresis. Heat-induced gels were obtained by heating of the isolates dispersed in coconut water. Increase in protein concentration caused formation of the gels with higher storage modulus, hardness, adhesiveness, chewiness and viscosity . A linear correlation has been found between the ultrasound viscosity and texture profile analysis parameters (hardness and chewiness). The obtained supplement can be used by people with greater demand for protein and potassium.
INTRODUCTION
The coconut is a very important fruit tree growing mostly in Indonesia, Philippines and India, with the world annual production about 55 million tons. The importance of the plant consists in , that all parts of the tree are utilized in very different applications. Coconut water is a clear liquid obtained from young, green coconuts. Coconut water serves as a refreshing beverage providing important health benefits (1). The chemical components which contribute to its bioactivity are used in biotechnology and biomedical fields (2). Polynesian, Melanesian and Micronesian mariners used coconut fruits for centuries as reserves of food and drink. This “naturally canned” beverage helped them to survive their journeys from one island to another (3). During World War II, coconut water was used in emergencies and put directly into patient’s veins. (4). Also nowadays, coconut water is treated as an effective form of intravenous hydration solution over short periods of time.
