By using InFat, in infant milk formula, not only the energy of human breast milk is supplied to the infant but also the structure of the fat is mimicked. InFat is characterised through a high level of palmitic fatty acid in the middle position (beta position) of the fat molecule thus its generic name Beta palmitate. This enables a closer resemblance to human milk fat than when using standard vegetable oil and also provide additional benefits for the baby such as reduced constipation and increased calcium and energy uptake.

In mother's milk, and in infant formulas, up to 50 percent of the calories are supplied to babies as fat. This fat is mainly in the form of triglycerides, which contain saturated and unsaturated fatty acids esterified to glycerol.
