The consumption of more natural and healthier foods has been an upward trend in recent years, a trend that has led the food industry to attach greater importance to novel foods.
Novel foods are described as food that had not been consume to a significant degree by humans and «can be newly developed, innovative food, food produced using new technologies and production processes, as well as food which is or has been traditionally eaten outside of the EU» (European Commission, 2019). Novel foods include functional foods, which are foods that not only have optimal nutritional characteristics, but are to promote health and reduce the risk of disease (12). Here’s when free from food comes in, a subcategory within functional foods where certain ingredients (i.e. gluten, sugar, lactose, etc.) are suppressed.
