Proximate and functional properties of sugarcane bagasse

Abstract
The proximate and functional properties of sugarcane bagasse were revisited using bagasse powder from Malaysianyellow canes as the dietary fibre compositions and functional properties were largely unknown. The bagasse was found tocontain relatively low crude fat (2.0 percent), high carbohydrate (55.4 percent), high crude fibre (30.4 percent), high totaldietary fibre (79.5 g/100g) and insoluble dietary fibre (75.7 g/100g), high oil holding capacity (9.4 g/g), and high organicmolecule absorption capacity (8.3 g/g). These attributes suggested the use of sugarcane bagasse powder as a cheap source ofdietary fibre for food development.
